Mini Comfort Food Cheesecake

When I was younger I thought cheesecake was cake made out of sharp cheese like cheddar, parmesan, etc. Embarrassingly, I was the ripe old age of 14 when I learned about the existence of cream cheese and its wildly versatile uses. Now, you can't pry cheesecake away from me, and I love finding new and exciting ways to dress it up!
